Synonymous with every party is food, and we’ve got you covered for all things Triple Crown. Benedictine spread, a.k.a. cucumber spread for most of you, goes hand in hand with any pony party.
Try this recipe, which you can form into a ball and use as a cheese ball-type dip or make tea sandwiches with, for your next gathering. Your friends will be coming back for more, and asking for the recipe:
- 12 ounces cream cheese, at room temperature
- 1 medium cucumber, peeled and grated
- 1 medium onion, grated
- 1 teaspoon salt
- Pinch cayenne
- 2 tablespoons mayonnaise
- Drop of green food coloring
Drain the cucumber in a colander for a few minutes, then dry it on some paper towels. Drain and dry the onions the same way.
Toss everything in a big bowl and mix until well combined. Cover with plastic and stick in the fridge until ready to serve.
Want to kick it up a notch? Try adding a bit of Tabasco for a kick and add bacon crumbles to the sandwiches.
